Combine the orange juice and cranberries and set aside to soak.

Use some of the milk to mix the cornflour and custard powder into a smooth paste. Heat the rest of the milk with the vanilla. Remove from the heat and stir in the cornflour mixture, yolks, sugar and rind.

Return to the heat and stir until the mixture boils and thickens. Remove and stir in the soaked cranberries.

Transfer the mixture to a bowl and cover the surface of the custard with a piece of cling film. Allow to cool completely.

Lay a sheet of phyllo pastry on your work surface and brush with melted butter. Repeat the process until you have five sheets stacked. Then make another stack with the remaining five sheets.

Spoon half the custard on the long edge of the stack, leaving a border and shape it into a log. Fold the pastry over the custard, then fold in the sides and roll up to enclose the filling.
