2 (1 ounce) squares unsweetened chocolate
1/3 cup shortening
1 cup sugar
2 eggs
1/4 teaspoon peppermint extract
3/4 cup all-purpose flour or whole-wheat flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped nuts (optional)
Heat oven to 350 degrees. Heat chocolate and shortening in 2-quart saucepan over low heat until melted; remove from heat. Mix in sugar, eggs and peppermint extract. Stir in remaining ingredients. Spread in greased 8-by-8-by-2-inch baking pan. Bake until brownies begin to pull away from sides of pan, 30 to 35 minutes; cool. Cut into 1-inch squares. Makes about 4 dozen.
