, A soft-spoken Venezuelan native in cook's whites, standing over a stainless steel table, sweeping a layer of thick liquid chocolate over its cool surface.
She is tempering the chocolate, a process where it's heated and then cooled in order to align the cocoa butter molecules to produce a product that has two important characteristics of premium chocolate: shine and snap.
"It's very different from Hershey's," she said. "You can do more unique things or more delicate things."
As proof, a staff worker near Silvana is hand-dipping soft cubes of Moroccan mint tea-flavored ganache - the interior of a chocolate truffle - into liquefied white chocolate, then decorating the surface of the confections with thin swipes of green-tinted cocoa butter.
The front of the factory is the shop, where passersby can taste chocolate truffles in an array of flavors and colors, from acai pomegranate to hazelnut praline and strawberry balsamic to vodka citron. There are even gold-hued bacon chocolate bars. It's a rainbow-colored selection that would make were degreed professionals in Caracas, Venezuela, when the idea of starting their own business took shape. Silvana was an electrical engineer, Carla and Stefano both had MBAs from Emory University and were business professionals. Together, they decided to strike out in a different direction - one that would lead them to Texas.
