Candy making does not need to be frightening to the beginning cook. Making candy is easy for any skill level as long as a few guidelines are followed.

Holiday candy usually falls into one of two categories. Crystalline which is where fudge falls and non-crystalline which is where peanut brittle and toffee fall. Either of the two categories involves combining sugar with water and cooking the mixture until the water evaporates.

Candy making is one of the few times in cooking that you should follow the recipe exactly. Don’t substitute ingredients. There are many types of margarine on the market. For candy making, however, butter is recommended. Margarines contain too much water and different amounts of fat. These variables can ruin a tasty batch of home-made candy.
