Cooking school owner helps students conquer creamy caramel

 

I approached my pot with trepidation -- ingredients in hand and the stove on high. I wanted to prove myself capable, but had been burned so many times before. Not this time, I vowed. This time, victory will be mine.

Less than 15 minutes later, I had a glass jar overflowing with perfectly creamy, amber-colored caramel, and an enormous amount of satisfaction.

The pot went into the sink and it was someone else's turn.

This was the scene Nov. 17 at La Maison Cooking School, run by Kathy Sali of Yakima. After a quick demonstration, groups of students, three at a time, took turns making creamy caramel in large stainless steel pots. There were about 16 of us, and we were there for fun, for camaraderie, but mostly we were there to conquer caramel.

Candymaking is a staple of any holiday kitchen, fraught with peril as seasonal cooks watch the mercury rise too quickly on the candy thermometer and an afternoon's effort turns into so much inedible sugar.
