Claudine's Pumpkin Muffins
This recipe is especially for Patricia. This recipe will make 24 muffins.
1 cup canola oil
4 eggs
2 cups white sugar
3 cups pureed pumpkin, either canned or homemade from fresh pumpkin
3 - 1/3 cups unbleached all-purpose flour
2 level tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/4 tsp. ground ginger
Method;
-In a large bowl, combine the oil, eggs and sugar. Mixing well, until the sugar is dissolved.
