Applesauce Spice Cake

Ingredients

2 1/4 cups unbleached white flour, preferably pastry flour 1 teaspoon salt 1 1/2 teaspoon baking soda 2 teaspoon baking powder 1 1/2 teaspoon ground cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ground cloves 1 1/2 cups rolled oats 1/3 cup vegetable oil 1 3/4 cup pure maple syrup 5 egg whites (or 1 mashed banana) 1 1/2 cups unsweetened apple sauce

Directions

Preheat the oven to 350 degrees. In a medium mixing bowl, sift together the flour, salt, baking soda, baking powder, cinnamon, nutmeg and cloves. Stir in the oats and set aside. In a large mixing bowl, cream the oil and maple syrup for at least 3 minutes, until well blended. Add the egg whites (or banana substitute) and beat on high speed for another 5 minutes, until light and fluffy. Thoroughly mix in the applesauce. Gradually add the flour mixture, beating well after each addition. Lightly coat a 10-inch Bundt pan with cooking spray.
